The cacao inside this chocolate is the Trinitario varietal. Settled on a cooler roast profile to capture notes of honey, grape and toasted walnut.
The chocolate is hand sorted, roasted, cracked, winnowed and stone ground for up to 80 hours before ageing our chocolate. Each bar is then tempered, moulded and hand-wrapped in the small Shirl + Moss factory based in Wellington, New Zealand.
